Feeding a room dessert is a different problem from feeding one person. Platters solve it: crepes and waffles cut into quarters, sweets trays arranged so people can take one and keep moving, fruit bowls that hold up on a table for an hour.
Drinks scale the same way — jugs of fresh juice or mocktails instead of a bar, which is usually the harder half of a dry event to get right.
